I bought the Career Pack and it is locked again

Open Settings in the game and tap Restore purchases. That asks Apple whether the Apple Account signed in on this device owns the pack. If it still does not unlock, make sure you are signed in with the same Apple Account you bought it with.

Where are my careers saved?

On the device, in the app's own storage. They are not in iCloud and do not move between devices. Deleting the app deletes them.

How do I start over?

Settings → Erase everything deletes every career and every record on the device. It cannot be undone, and it does not remove the Career Pack — a purchase stays with your Apple Account.

The screen shakes when the boss appears

Settings → Calm mode turns that off. The game also follows the system Reduce Motion setting.

Something is wrong with the game

Send an email with what you were doing when it happened. Screenshots help more than anything else.
